    <directions>Saute Peppers and Garlic in a Stock Pan. Wait until hot and add spinach. Bring to a boil and add spices, couscous and broccoli.  Reduce heat and let sit for about 5 minutes.  Turn off heat, and let sit for another 10-15 for the flavors to come together.  Top with Parmesan Cheese and more S/P. Enjoy!

*** If you add to much couscous, you end up with a large pot of just couscous, which is also good, but unfortunate if you're going for soup. It will sneak up on you. I added 1 C / 6.5 Cups water, and ended up with a VERY thick soup. Next time I'd definitely add less. Also the soup didn't have as much flavor as I'd have liked. I didn't add the rosemary, and will definitely do that next time, as well as some celery (blech) for flavor.  Anybody have any other suggestions?</directions>
